I told you that Sweet Heat Taco Power Bowl would be on repeat – it is just SO dang good. I also made a breakfast cottage cheese power bowl on Monday too – super delicious and filling.


Week of 7/20/26
Mantra for the Week: Celebrate YOU!
It’s my boyfriend’s birthday week! During the week, I will update with recipes. I’m making some of his favorites and trying a new recipe. I have consistently been making the weekend a ‘kitchen challenge’ – what that means is, don’t go buy anything, use what you have and get creative. Stay tuned and happy cooking!

I will not be sharing the tuna hand-pie recipe, as they were gross. Hey, they can’t all be winners…I was just bummed that I wasted 2 cans of yummy tuna. I made up for it the next night by making some delicious steak tacos. I sauteed some mushrooms and they were a great flavorful addition.
I love celebrating others and making food is definitely a love language of mine. We went sailing for my boyfriend’s birthday in the evening, so I made up a ‘ship ready’ charcuterie and made sure to have a yummy pudding dessert (his request) in the frig when we got home. I will have to write up the recipe, as it was delicious (stay tuned).


I am a big Trader Joe’s fan! Here are a few new fun things…and we really like this salad too. Great to have some bagged salad on hand for easy pull together meals. This was our Sunday lunch – delish!

Mantra for the Week: Trust Yourself – NO Second Guessing
Well, re-entry after our amazing 4th of July vacation was real. I winged it for dinners last week. This week’s menu does not disappoint.

I picked up these beans at one of our favorite spots in our frequent travels (Granzelli’s) and they were delicious in this Cowboy bean skillet. Cooking up extra chicken breasts on the grill, when did the steak and salmon was a great move. Having extra chicken to snack on throughout the week is helpful…and healthy!


I also made the most delicious pasta sauce EVER! You must whip up a batch of this. I froze half and mixed the other half with pork sausage, shaved parm and noodles and this was the best spaghetti I’ve ever made. Just sayin…


On the weekends, we are trying to eat up what is left in the frig. This throw together salad did not disappoint…nor did this Bolthouse Farms dressing. We had some chicken strips left in the freezer, so I threw those in the air fryer. We had some cooked bacon and hard-boiled egg and all sorts of veggies. It was the perfect Sunday lunch.
