Mantra for the Week: Trust Yourself
Happy new month! I did a little breakfast meal prep over the weekend and will share the recipe below. I will be sharing various new recipes using different cooking gadgets (air fryer, crock pot, Ninja Foodi, etc.) – keep an eye out and have a wonderful week. Happy cooking!

We bought a ham at Costco and divided it up. I sliced it all first and then froze half. I made this yummy breakfast casserole (recipe below) and sliced for sandwiches (I make a killer ham, brie & fig spread sandwich…just sayin’. I even made a delicious cottage cheese bowl with ham, arugula, cottage cheese, avocado and fig spread – YUMMY!!




Oh, and our salmon bowls from Monday were delicious. Loving this new ‘gadget’ series that I’m creating. Dinners and meal planning should be fun and easy – make it your own and enjoy your time in the kitchen.
