Week of 5/25/26

Mantra for the week: Be Consistent

Happy Memorial Day week. I know some are just getting back to reality on Tuesday. We had company this weekend and had SO much watermelon left over. I made the most delicious salad last night to go with our fish. Watermelon in everything this week! We started out our morning with watermelon smoothies and they were very refreshing and delicious. Cheers to a wonderful week ahead – happy cooking!

I get the tortilla-crusted tilapia at Costco and it’s delicious – so great by itself, in salads or even in a taco. his watermelon salad I could eat on repeat. These ingredients were what I had on hand and worked so well together.

We had watermelon smoothies, the most delicious watermelon salad and a very easy watermelon sorbet.

Week of 5/18/26

Mantra for the week: Make Someone Smile

Adjusting very well to my new address in the mountains. It’s also quite nice to have willing helping hands in the kitchen. Pro tip: BBQ a few different protein choices to use for multiple meals. On Monday, we BBQ’d the flank steak and some marinated chicken thighs for lunches and dinner on Wednesday. The leftover flank steak made for great tacos on Taco Tuesday too – win win!

Week of 5/11/26

Mantra for the week: Savor Every Minute

I’m working to get settled into my new home / new city. Making things easy this week. When you merge kitchens, there is an overabundance of food and we are going to eat from the freezer and pantry for the whole dang month. Trader Joes is helping so much this week. Just getting back from vacation and trying to unpack (moving is so fun). I’m thankful for their easy and healthy pull together meals. Below you will see some tried and true TJ’s favorites on the menu this week. The carnitas are also from Trader Joe’s and they have very quickly become one of my favs to keep on hand! Taco Tuesday made easy – you’re welcome!

These Trader Joe’s carnitas are so dang good. I prefer my rice and beans on the side and he likes them IN his taco – each to their own!

Two more easy and tasty things to share. We had these green beans in the freezer and threw them over the top of the Shepard’s pie with some frozen peas – YUMMY! I also whipped up a healthy version of tuna noodle with these new Goodles – give them a shot, great alternative.
