Happy November! No menu for the first week, as I was out of town – no cooking for this girl. Although, I did prep a good amount my food for my son before I left – I can’t help myself. I also did some great and easy prep over the weekend (see below). As always, as I make meals throughout the week, I will post the recipes. Anyone else do hard-boiled eggs in their Instant Pot? It’s awesome…1 cup of water, 5 minutes cook, 5 minutes sit (then release the valve and take them out) and give them a 5 minute ice bath. I love prepping these on the weekend – great for salads, egg salad sandwiches or just a snack on their own.

This is ONE head of cauliflower from Sam’s Club. I cleaned it and put in separate serving bags. I love to roast it and halfway through throw on some grated parmesan – another kid fav!
Menu for the week of 11/10/24

Notice my pretty Trader Joe’s flowers – I just love those $3.99 bouquets! So, I debated re-typing these recipes, but figured, I’m going to keep it authentic…food and grease stains and all. These Parmesan Garlic Butter Noodles are a big fav of my kids. For the chicken tacos, I just de-boned a rotisserie chicken from Sam’s club. I will just throw it in a pan with some taco seasoning and water – Voila! Tonight’s dinner (Monday) was my son’s request, I wasn’t even hungry…more leftovers for him.






Do NOT skip the brine step of this baked chicken breast recipe. Just trust me and try it – these were juicy and so delicious! This is a Skinnytaste recipe, I love her stuff. Click HERE for the recipe. I’m on a big zucchini kick, I just sauté them in a pan with a little olive oil and seasoning or roast them.

Menu for the week of 11/17/24
Nothing fancy this week. My beef taco roll-up’s are simply taco meat and cheese rolled up and I either throw them in the air fryer or a pan with some spray to crisp them up. I guess they are basically a taquito. Very easy and tasty. I love the Just Bare brand for chicken strips or breaded patties. Costco is the best place to grab a bag.

Menu for the week of 11/24/24 – Happy Thanksgiving

It’s Thanksgiving week! My Aunt started a tradition quite some time ago that I have kept going through the years. The day before Thanksgiving, we have a seafood feast – Crab, Lobster…whatever I feel like whipping up. Costco has delicious Lobster and King Crab legs – you just never know what they are going to have out! I’m getting off easy for Thanksgiving this year and have been tasked with making Mississippi Mud. This is such an easy crowd pleaser of a dessert…and this cookbook is one of my absolute favs! I knew I wasn’t going to use all of these bell peppers in the next week or so. I kept out a bag for my fajitas this week and added some sliced onions (a little easy meal prep). I sliced up the rest of them and tossed them in the freezer. My Aunt taught me that little trick. When you want to cook with them, just use them from frozen state!

I’ve been adding cottage cheese to my eggs for a few weeks now and it is so filling and delicious. This morning, I made a batch to use for a breakfast sandwich, burrito or just by itself. These seasoning really make the flavor SO good! I swear I could sell this breakfast sandwich…sourdough bread, mayo, egg mix, bacon, cheese and arugula. Wowzer – flavor explosion! AND I now have breakfast prepped for the week – win win!
