Week of 3/3/25

Mantra for the week: Whatever I do, I will do with my whole heart

I have a busy week this week, so I’m setting myself up for success in the meal planning department. I’m trying one new recipe tonight, as I know my daughter loves CrunchWrap’s…so I’m attempting to make them at home (wish me luck). Click HERE for the recipe I’m using. OK, reviews are in and they said they were great and I loved how easy they were. You can play around with ingredients but what a fun spin on Taco Tuesday. Throw Crunchwraps on your menu next week!

Week of 3/10/25

Mantra for the week: I have everything I need to make this a great week!

I have a very full week again and trying to make things as easy as possible, yet still have a plan. I have shredded chicken in the freezer to thaw for tacos – easy peasy. The Maui Mahi are frozen fillets from Costco – tasty and easy. I will post the recipe for Thursday’s meal, if it’s worth it. Happy new week!

Week of 3/17/25

Mantra for the week: I will achieve great things through small steps!

It’s my daughter’s birthday week. Mikuni (a delicious sushi place by us) is always on tap for her birthday. Sloppy Joes are a close second – ha! I have two do-overs from last week, since I didn’t make them. Instead of beef tacos on Tuesday, I had leftover tostada shells, so we had tostadas instead and they were delicious. I didn’t have any refried beans, but had a can of pinto beans, so I made my own…uhhh, yummy!

I made two breakfast options over the weekend. The viral tortilla, cottage cheese egg bake is easy, filling and delicious. I mess around with the veggies and even added some chicken sausage this time. You can grab the recipe HERE. I’m also hooked on MUSH overnight oats. I make a nice protein bowl (pictured below). Both of these are great to prep and have on hand for the week for grab and go breakfasts!

If you haven’t tried Kevin’s Natural Foods meals, you should. This week we tried the Korean Beef and it was very tasty. It literally takes about 5 minutes. Great healthy option to keep on hand!

I tried a new recipe this week and it didn’t disappoint. I will absolutely make this Sweet Chili Chicken Rice Bowl again. Although next time I will read the instructions and use full fat coconut milk, reduced fat was still good, but not creamy. HERE is the recipe – definitely give it a shot!

Week of 3/24/25

Mantra for the Week: My health is my priority & responsibility

Last week was a yummy menu! This week I have chosen to do the 5-Day Inferno. I’ve used this yummy little reset plan for years. It’s great, you can prep for the whole week for all meals. It’s a great way to get my nutrition back on track. I don’t know about you, but I just feel better when I eat cleaner. Here is the meal plan:

Mantra for the week: New Month Energy! I am grateful for all I have & all that is to come.

Last week was SO easy, delicious and filling. I loved having my entire day of eating planned out. It took out the guesswork and kept my nutrition on point. I’m trying a new recipe on Monday and tried the new viral Hot Honey Ground Beef bowls for lunch today. Click HERE for the recipe. I thought it was delicious and flavorful.
