Weekly Menus – January – 2025

Week of 1/6/2025

The new year is officially here! Let’s start off right and plan our meals and stick to a food budget. My boyfriend gave me a kitchen challenge last week and I want to carry that through. Work with what you’ve got and fill in fresh fruits/veggies. That’s what I’m doing this week. Nothing too fancy and giving a night to my daughter to cook!

Week of 1/13/2025

Here we are, week two of a new year. Are you planning your meals or order Door Dash? As I always say, it doesn’t have to be fancy, you just need to DO IT (Be like Nike – Just Do It)…plan those meals and stay within your budget. I didn’t make Sloppy Joe’s last week and since it’s a favorite of my daughters, it’s going down this week. Happy cooking and don’t forget to have some fun in the kitchen!

Week of 1/20/2025

It always feels good when I stick to our meal plan and we did just that last week. I was even brought dinner in bed (I was working in my room). My daughter and her boyfriend made delicious chicken quesadillas and a fruit bowl for dinner. I made my Aunt’s scalloped potato recipe and I need to perfect that one, but the recipe is delicious …I mean you had me at Gruyere cheese!

This week, I did a bit of prepping and made a blueberry cottage cheese bake for breakfasts (I will give my review in the morning when I try it). I love adding cottage cheese to my eggs and other dishes to up the protein factor. I made a breakfast quesadilla this morning and added cottage cheese – it was so tasty. I’m definitely making these again this week too. Add whatever veggies and I added some turkey sausage – YUMMO! I deboned a chicken and cleaned some cherry tomatoes and blueberries for easy and healthy snacks. Remember failing to plan is planning to fail.
