Mantra for the Week: Finish What you Start
Happy New Year! I have been a bit absent from sharing my menu’s, my apologies. Let’s start the New Year off with planning your meals. I don’t care if you are having peanut butter and apples for dinner, just write it down so you don’t have to think about it. For lunch on Sunday, I made two homemade pizza’s – now I have lunch for the week – YUMMY! Dinner was panko crusted chicken in the air fryer (love this easy Kinder’s mix) and pasta…with apple slices.

For those of you new here, Tuesday’s are always ‘Taco Tuesday’ and I try to incorporate a Kitchen Challenge in once a week. This is just a way of getting creative with leftovers or whatever you find the frig/freezer – have fun with it! Happy meal planning.
