Mantra for the week: I am fully present, embracing the gift of NOW.

A childhood favorite of mine is Chicken Parisienne from The Taste of Oregon cookbook (a favorite cookbook, as well). It really hits the spot. The rest of my menu is nice and simple…even the birthday dinner is fairly simple. The toughest part is cracking the lobster and carefully pulling the meat out, but it’s worth it! I love making my kids’ favorites year after year for their birthday…my Mom always did the same for me (still does)!

Mantra for the week: Living in total & complete gratitude for my life.

Yep, I took a two week cooking hiatus. Well, not completely…but between being gone for a week at a work conference and a crazy week after I returned, I didn’t plan for anything and I felt extra chaotic – shocker! I’m back and already feeling a difference in my level of crazy, JUST because my meals are planned. Nothing fancy and it’s super simple, but it’s planned. Happy new week and almost new month.
