Weekly Menus – February

Week of 2/3/2025

If you read my blog, you know that I had a tad of a mishap last week and didn’t post a menu. However, I made some yummy food prior to my skiing attempt. My tuna noodle casserole, Slow Cooker Beef Chili, Jalapeño Cheddar homemade bread (thank you new bread maker) and homemade corn bread was straight up comfort food…all of it! I have linked the casserole and chili recipes, as I definitely recommend and will make again. I read the comments on the tuna noodle and I did double the sauce and bake at 350 degrees for 10 minutes prior to a quick broil – I recommend those changes…delicious! We made some delicious fruit bowls for breakfast too!

Mantra for the week: I am patient with myself and with others

Here is my menu for the week. I’m choosing easy meals that if I’m not feeling Ok to make food, then one of the kids can pitch in. The chicken burrito bowls were AH-MAZING! Trader Joe’s frozen fire roasted corn and fire roasted bell peppers and onions were the perfect addition. I used rice, pinto beans, cherry tomatoes, avocado, cilantro, pico, cheese and sour cream. You can clearly use anything you want…eat your heart out Chipotle!

Week of 2/10/2025

Mantra for the week: I will show up for myself and for others

It’s my birthday week and I don’t care if I have a peanut butter and jelly sandwich for dinner – I’m not cooking on my birthday. These Garlic Butter Steak Bites are super easy and packed with flavor. I’m a big fan of Skinnytaste recipes, check her out! These Baked Chicken Breasts are easy and also very flavorful. The frozen orange chicken was on sale at Costco this week. That always makes for a very easy throw together dinner and it’s everyone’s favorite. I also got these amazing overnight oats at Costco – very clean ingredients and super tasty. It’s very easy to make your own, but these are great to have on hand for a good grab ‘n go breakfast.

Week of 2/17/25

Mantra for the week: I am enough, just as I am. I will always be enough.

I’m excited to try a few new recipes this week. I will post my reviews as we give them a try. Check out that oil spot on my recipe (face in palm).

OK, this is a terrible picture (reminder to myself to put my glasses on when taking pictures, but this Grilled Shrimp Bowl was an absolute flavor explosion. Definitely recommend. Click HERE for the recipe. I will keep this one on rotation for sure…don’t let the picture fool you.

This crock pot Chicken French Dip recipe is so easy and just a nice dose of comfort food. We used provolone cheese, use your favorite cheese. The Au Jus is almost like onion soup – so yummy!

Lastly, this strawberry chia pudding was very tasty and filling – two thumbs up. To up the protein and to make it extra filling, you can absolutely add oats or I added walnuts too. Recipe HERE.

Week of 2/24/25

Mantra for the week: My life is not a mistake – I’m here for a purpose.

Last week was a little wonky and I didn’t quite get to try all of the yumminess that I was preparing for. I’m trying to make up for it this week. I made these great no bake peanut butter bars and am storing them in the freezer for a nice sweet treat. Recipe HERE – check out this entire website. She’s got some GREAT stuff!
