How in the heck is it August already? I’m working on re-entry from a long weekend away. So, I’m making this an easy week. I got off track from my Weight Watchers a bit, but got right back on the horse! I picked up some GREAT Trader Joe options this week. I will absolutely put all of these on repeat.

Anyhoo, here is the menu for the week…

I used this chicken that I picked up from Sam’s Club for the BBQ Chicken Sandwiches – delicious and zero points with WW. I like to make my own, but this is an easy hack and great to have on hand.

Sunday’s nights dinner was delicious! BBQ Salmon, mixed green salad with mango and roasted beets, carrots and brussels topped with candied walnuts and goat cheese. OH MY YUMM!

Mantra for the Week: I am exactly where I am supposed to be

I decided on some Kevin’s for Monday night…if you haven’t tried a Kevin’s Natural Foods meal, you should! I also got some new cookbooks this week, which is so silly because I have SO many. BUT, it’s my thing, I love cookbooks. So, two new recipes this week. Whipping out the Instant Pot for Taco Tuesday and trying these Shredded Beef Burritos and making a new salad this week, the Malibu Salad. Stay tuned for a review.






Shredded Beef Burritos, Crock-pot Lasagna and especially this Malibu salad (definitely add a side of bacon) are all going on the ‘make again’ list! YUMMY!!

Mantra for the Week: I am Calm, Centered & at Peace
I’ve added a new ‘meal’ for my weekly menu’s – ‘Your Turn to Cook’. Whoever else is in your house with you – someone else is on deck for dinner that night. Live alone? Perhaps, treat yourself to take out.

A little prep of some chicken breasts this weekend, makes for easy sandwiches and salads. I like to split the chicken breasts, making them more like a cutlet. I marinade in whatever sounds good and then throw them on the grill. You will thank yourself later. Happy cooking!

Holy smokes, this is the last week of August – what is happening?! This month…I mean YEAR, is completely flying by! Very busy week for me this week, so I kept it very simple! Meal planning doesn’t need to be perfect, you just need to do it – Happy Cooking!
