First of all, let me offer my apologies. I’ve been working from home since my ACL surgery and have been winging it in the kitchen. As a result, my nutrition is off track a bit and I just feel a tad disorganized. I’m back baby! I’ve also recently joined Weight Watchers. It’s not as easy for me to get my nutrition going in the right direction if I’m not tracking EVERYTHING I eat. What an eye opener. Things I thought were healthier alternatives, just weren’t. So, with that being said, you will see a variety of things in my meals. I still cook for others that don’t need to reel it in, like me. Sometimes I will cook extra for myself for two dinners, so I can cook something that might be my son’s favorite that isn’t necessarily in my best interest right now. For instance, he loves Trader Joe’s Orange Chicken (so do I), I just don’t want to use half my point on dinner. What I love about Weight Watchers (WW) is that you can eat whatever you want, you just have to track everything and really watch your portions.
Week of 7/14/25
Mantra for the week: Focus on what you CAN do

I will share my meals as I make them. The ‘BLT’ tortilla wraps are delicious, I have them on repeat. I put BLT in quotes, because I’m using canadian bacon instead of bacon…don’t knock it till you try it!
Monday: I had eaten all but THREE of my points for the day for breakfast, so I had to get creative for lunch and dinner. I was proud of myself, I did it and was full and satisfied. You CAN eat healthy on a budget – you really can!


Tuesday: Always Taco Tuesday at my house…and these fish tacos were SO good. I loved the sauce, the slaw – all of it. The sauce was a delicious sour cream alternative and drizzled on some refried beans was quite tasty! For you WW peeps – 6 pts for 2 tacos AND the refried beans – yes, please! Recipe HERE.





For lunch I made these delicious BLT wraps – I used Canadian Bacon, laughing cow cheese, lettuce and cherry tomatoes. I like the carb balance tortillas. So yummy – a great new wrap in my recipe box!


Thursday: I made fish for me and steak for my son – we both won! PS…I can’t have a grill where I live and LOVE my Ninja Foodi Grill (air fryer, etc.) – I’ve had it for a few years and use it at least once a week. Bacon & Egg Breakfast Cups (VERY low WW points). HERE is the recipe. Also coming in at a very low point value BUT with high flavor is the Chocolate peanut butter overnight oats. You can’t go wrong with either of these!

Mantra for the Week: Make the Most of Your Minutes!

Clearly I am loving both the Overnight Oats and Cottage Cheese Bowls – easy, healthy and staying on repeat. I’m excited to try this Coq Au Vin crock pot recipe. I will let you know how it is. Happy new week to you!
