Weekly Menus – May

The first few weeks

Mantra for the month: I am beyond grateful for this loving, beautiful, healthy body that I have; that continues to get stronger everyday.

I have been in preparation for my daughter’s college graduation (out of state) and my upcoming ACL surgery. I have been winging it in the kitchen. I invite you to scroll through previous menus and get creative in the kitchen. I will absolutely be back to planning hopefully by the last week in May! Happy meal planning and cooking!

Mantra for the week: I’m in awe of what my body is capable of

Before I post my menu for the week, I must pay homage to my amazing Mother. Below you will find the variety of amazing food she made for me while I was recovering the first few days after surgery. To say I was spoiled, is an understatement. Check out all of these yummy meals…

I don’t know if I could pick a favorite. She fed me the yummiest food. I LOVE a good tuna melt and the parfaits were always delicious. The shrimp louie was SO good – again, no favs, it was all tasty. She inspires me every day to be a better cook!

I need healthy options that take me no longer than 15 minutes in the kitchen right now. I always keep premade pizza crust in my freezer (Loving the 3-pack from Costco – it’s a sourdough crust). Pizza was delicious last night! I made a veggie for me (this is at least 3 meals for me) and a pepperoni for my son. Yummy!
