I can hardly contain my excitement – I feel like a little kid at Christmas. It’s kismet…I ran out of my old meal planning sheets and my new ones should be on my doorstep any day this week. So, my menu is below and it isn’t overly exciting…but it’s planned!
Monday: Turkey dinner – yep, we went for round two and made a turkey and mashed up some sweet potatoes with butter and garlic salt. I thoroughly enjoyed my turkey sandwich for lunch today (Tuesday)
Tuesday: Steak Tacos…duh, it’s Taco Tuesday!
Wednesday: Sesame Chicken (I make this about once a month, as it’s my son’s favorite), white rice and garlic bread

Thursday: Breakfast for dinner
Friday: Homemade Burgers, potato wedges and pan seared zucchini (I’m on a zucchini kick right now)
Saturday: Leftovers
Sunday: Undecided…and that’s OK
It doesn’t always have to be elaborate. I have a very busy week this week and wanted to make my life simple, yet still not spend money eating out. These will be available for purchase very soon – aren’t they so dang cute!!

Menu for the week of 12/9/24
Eek – my new pads are in…and it looks so cute on the side of my frig. My boy is going on a trip later this week, so I’m going to wing it. I love my Mantra for the week:

Dinner was delicious tonight. I marinated chicken all day and made chicken sandwiches on Ciabatta bread. I melted swiss cheese and toasted them up in the oven and added bacon aioli and arugula – YUMMO!!
I prepped some eggs (eggs, cottage cheese, Bacon Bacon seasoning and Spinach Herb seasoning) for burritos or sandwiches this week. That peach-pineapple salsa from Safeway was very tasty. I also prepped a few fruit bowls.






I’m trying a new recipe this week. This is from the Skinnytaste cookbook – Meal Prep. I love her cookbooks!

Well, the Korean Beef & Rice bowls didn’t happen last week…so these are going on the menu for this week. They better be good – ha!
Mantra for the week: I am attracting abundance and positive energy into my life!

For Monday, I am marinating my chicken ALL day in this yummy marinade. I LOVE every single marinade I get from the Tahoe House. If you are ever on the West or North shore, please stop by and support them!

VERY easy menu for the week. Both my steak tacos and shredded chicken (for the quesadillas) are frozen and ready to rock. This is why prepping some easy things for the freezer is so helpful (and a great money saver). It IS the holiday season and I like to try and make things a little easier on myself PLUS my daughter moves home the end of this week…my college graduate daughter. EEK, I’m so proud of her! She gets to pick dinner on Saturday. Happy cooking and make it a great week!
Menu for the week of 12/22/24
Christmas week, where not much will go according to plan, but I’m going to give it a shot.

My contribution for Christmas Eve is Jell-o Pretzel Salad. We’ve made this recipe for YEARS in my family. Every year, I say extra prayers that my Jell-o sets. Let’s just say it was still edible this year. It’s so tasty!
