Weekly Menus – October – 2024

*NOTE: Things don’t always go according to plan. Sometimes I overplan and have to move things around, etc., but at least I have a plan. I also have a tenancy to make things sound fancier than they are at times – don’t judge. I will share photos and any thoughts on the recipes I make along the way.

Tuesday: Tuesday is ALWAYS Taco Tuesday in some form. Perhaps it’s enchiladas or burritos…that one is typically a non-negotiable for me.

Parmesan Peppercorn Beef & Veggie Kabobs

Well, this was sure tasty! I opted to not make up the kabobs to only pull them off. I also didn’t grill. I just heated up a pan on med-high and Voila! This is a great thing to prep the night before and you will have dinner in 10 minutes. Serve over rice and with a green salad. This seasoning was a cheese ball mix – YUMMY!

ONE Pan Southwest Stuffed Peppers Mix

This was delicious and will now be on hand at all times. SUPER easy, healthy AND delicious! Enjoy!

Ground Turkey Sweet Potato Skillet

Another successful recipe this week! I took this to a friend’s house and we both loved it. You could definitely add whatever variations you’d like. SO yummy! I will absolutely make this again.

Pumpkin Spice Overnight Oats from Benji Xavierr

This was delicious and super filling. I actually saved half for later and it was like a dessert after my lunch. I will 100% make these oats again. GREAT for breakfast meal prep!

Walnut-Crusted Chicken with Honey & Brie from Half-Baked Harvest (I LOVE her Cookbooks)

We liked it. I would chop the walnuts extra fine and a little less of the honey sauce…but this was delicious!

Menu for the week of 10/13/24

Recipes for the week of 10/13/24:

Since I didn’t make the walnut-crusted chicken dish last week, I made it on Sunday (see recipe above). I made myself an easy menu for the week. The chicken fajitas are already done, just need to thaw from the freezer (also something I didn’t end up making last week). I grill my flank steak on my Ninja (I love this thing). The roasted veggies are a frozen mixture from Costco (SO good) and the Orange chicken is the frozen version from Trader Joe’s. The pumpkin spice overnight oats were so tasty (recipe above), I’m making those again too.

My Ninja is used often. I use it for grilling and air frying. I need to dive into the other features…one of these days.

Menu for the week of 10/20/24

Happy New Week! Easy menu for the week and a new recipe for Sunday (tonight). It’s already marinating. I’m excited to get my new menu sheets completed to share with all of you. To make meal planning easier, it’s great to know what to prep the night before.

I was at my Aunt’s last week and she made me the most amazing breakfast bowl. When I got home, I got the ingredients and have already made it twice. Arugula, shredded parmesan, roasted mushrooms, diced potatoes and pancetta (I pay fried mine with some yummy seasoning, pictured below) and two poached eggs on top. Super yummy, healthy AND filling!

Menu for the week of 10/27/24

I’m making my son’s favs this week to freeze extra portions for easy meals. Another easy menu for the week. As I make the meals, I will continue to update here with photos and recipes. Happy cooking!

I ordered my son a pizza and I made a yummy batch of roasted veggies for my boyfriend and I – DELISH!
I used zucchini, carrots, onion, mushrooms & white sweet potatoes – use whatever you want. I love roasted vegetables. This seasoning was very tasty, it’s so fun to try new seasonings to add some tasty flavor.
